Lapsang Souchong is a ‘smoked’ Chinese black tea. Unique from other teas by the process of production, it gains its distinct taste from the smoke of Chinese pine tree. According to one version of the story, it was first produced by tea merchants, trying to speed up the drying proccess during a time of upheaval in China  by exposing the tea leaves to smoke from burning pine trees. According to the other version, the tea merchants came up with this method trying to prepare a large shipment for export on short notice…either way, this type of tea gained its popularity in the Western world, and is considered by the Chinese as a ‘Westerner’s tea’. It is said to have been consumed by Sir Winston Churchill himself.
